Sun Tea

      Sun tea is a rather fun and interesting way to brew a delicious drink in the middle of summer when I’d rather not have another pot of boiling water on my stove. It’s also pretty and very easy – walk out to your garden in the morning and pick your herbs. Place them in a jar, add water and a little honey, and set the whole thing in the sun. Done.

      Since there are no high temperatures involved, sun tea is rather like cold brew coffee – the flavor is quite delicate and refined, perfect for sipping as you wake up to a hot summer’s day. The blend of herbs in this recipe is mild and refreshing –  mint is known for it’s freshness, lemon balm is calming, and thyme helps boost your immune system. All you need to finish the tea is a touch of light honey.

how to make sun tea…

      First of all, cut a large bunch of mint, since it’s okay to stuff the jar rather full. Add a little lemon balm and a few sprigs of thyme to your basket. 

      In a small bowl or cup, dilute the honey with a little warm water – it can be quite hard to stir in otherwise. Stuff all the herbs in the jar, and pour the honey-water over them. Fill the jar the rest of the way with water. 

      My front porch faces east, and my back porch west. Therefore my sun tea goes on the front porch in the morning, and then around noon gets moved to the back. So! Just place your jar of tea wherever it will be in the sun, and move it if you need to. ☺️

      In the evening, bring your tea inside! Strain the herbs out, and pour the tea into a pitcher. Add ice if you’d like, and chill in the fridge overnight. In the morning, your wake-up drink will be waiting. 😉

Ingredients //

  • 1 bunch Fresh Mint Leaves
  • 1 handful Fresh Lemon Balm Leaves
  • several Fresh Thyme Sprigs
  • cup Honey
  • Water
  • Ice

Instructions //

  • In a half-gallon size mason jar, place the mint, lemon balm, and thyme.
  • Dilute the honey in a little warm water, and pour over the herbs.
  • Fill the jar with water, cover tightly, and give it a shake.
  • Set in the sun for 8 hours, strain, and chill!

Notes

  • This recipe is rather like cold brew coffee - instead of heating the water, you simply give it time to steep. This method gives the drink a more delicate flavor, which I believe is delicious.
