Peach Salsa

      Nothing says summer to me quite like fresh salsa – and when it’s bursting with sweet, height-of-the-season, fresh peaches, so much the better. I like my peach salsa very mild – it just seems to go better. However, go ahead and make it spicy if that’s how you like it! 

      The colors of this salsa are so pretty and summery – bright purple onion, vibrant green lime, and softly hued peaches. It’s such fun slicing all the flavors together – I can’t wait to make it again; maybe tonight with peaches given to me this morning.  😊

how to make the peach salsa…

Dice a bit of purple onion, pepper, rainbow cherry tomatoes, and jalapeño (if you like). Keep them very small, since the rougher your salsa, the harder it will be to keep on your tortilla chip. 😉 Cut a peach and add it to the bowl. Try to use a less ripe one, since it will be rather mushy if it’s too ripe.

      Squeeze lime juice over everything, and sprinkle with salt and paprika. Eat it with fish tacos, tortilla chips, or whatever else you like! This would be a perfect after-swimming-snack as well. 🙂

Peach Salsa

Easy peach salsa recipe with cherry tomatoes, jalapeño, and lime. A delicious light and healthy side dish for summer!

Ingredients //

  • 1 Large Peach peeled, pitted, and chopped
  • ½ Red Bell Pepper cored, seeded, and chopped
  • 8 oz Colorful Cherry Tomatoes chopped
  • ½ Red Onion small
  • ½-1 Jalapeño cored, seeded, and chopped
  • 1 Lime juice from
  • ½ teaspoon Salt
  • ½ teaspoon Paprika

Instructions //

  • Chop all of the vegetables and the peach quite finely and place them in a medium bowl.
  • Squeeze the lime juice over them, add the salt and paprika, and stir.
  • Serve with tortilla chips, fish, or whatever your heart desires.

Notes

  • If you don't like the heat of a whole jalepeño, feel free to cut back to half, or even leave it out altogether. If you like a lot of heat, go ahead and add extra jalapeño!
