1handfulFresh Lemon Balm Leaves
severalFresh Thyme Sprigs

Instructions //
In a half-gallon size mason jar, place the mint, lemon balm, and thyme.
Dilute the honey in a little warm water, and pour over the herbs.
Fill the jar with water, cover tightly, and give it a shake.
Set in the sun for 8 hours, strain, and chill!
Notes
This recipe is rather like cold brew coffee - instead of heating the water, you simply give it time to steep. This method gives the drink a more delicate flavor, which I believe is delicious.
