      So I had this incredible burger – probably the best burger experience of my life. Seriously. It may have had something to do with the fact that I had just been in Central America for a week, and that I was so hungry after enduring a red-eye flight to the States, and that I hadn’t had a burger in… a long time. Also: it was a mushroom.

      I was hooked! It was so, so delicious. Ever since, I’ve been (day)dreaming about how to replicate the experience. And although it would be extremely difficult to measure up to the delicious-ness of that one burger in the LA airport, I think these ones are pretty good.

      I can see why a whole burger that is actually a mushroom sounds a little scary. However – portobellos are actually quite mild. They also have a wonderful umami flavor, and make a fantastic vegetarian substitute for meat burgers, if (like me!) you’re trying to get more veggies in your diet. I like to add bacon to mine, but if you want them completely vegetarian, go ahead and leave it out!

how to do the portobello mushrooms…

     In a shallow dish, pour the olive oil, worcestershire sauce, and paprika. Stir.

      Cut the stems out of the portobello caps, and reserve them for later. Place the caps in the shallow dish, and brush them  on both sides with the marinade. Let them marinade for about half an hour, turning them over halfway through.

      Turn the grill to 400° Fahrenheit, and grill the marinaded caps for 5-10 minutes on each side. Keep checking them, and take them off of the grill when they are tender enough for your liking.

how to assemble the portobello burgers…

     Slice a small white onion and the portobello stems into 1/4 inch strips. Heat a frying pan, melt a little butter, and sauté the onion and stems until they are caramelized and browned. Salt to taste. 

      Fry your bacon, slice your cheese, and tear your lettuce. If you’d like, toast your hamburger buns.

      And stack it all together! Add your favorite burger toppings – tomato slices, pickles, condiments, etc.

These portobello mushroom burgers are an easy, yummy way to get a few more veggies into your day. Marinade, grill, and top with everything that goes on a perfect summer burger. Don't forget the watermelon!

Ingredients //

For the Portobello Mushrooms

  • 5 Portobello Mushrooms
  • ¼ cup Olive Oil
  • ¼ cup Worcestershire Sauce vegan
  • 1 teaspoon Paprika

For the Portobello Burger Sandwiches

  • 5 Hamburger Buns
  • 5 slices Bacon cooked
  • 5 slices Cheese
  • Lettuce
  • 1 White Onion small
  • 2 tablespoons Salted Butter
  • ½ teaspoon Salt course
  • Condiments of Choice butter, mayo, ketchup, mustard, bbq sauce, etc.

Instructions //

For the Portobello Mushrooms

  • In a shallow dish, stir the olive oil, worcestershire sauce, and paprika together.
  • Destem the portobellos, and place the caps in the shallow dish along with the marinade. Reserve the stems for later.
  • Brush the caps with the olive oil mixture, then let them marinade for half an hour, turning them over halfway through.
  • Grill at 400° Fahrenheit for 5-10 minutes on each side, checking every few minutes, until they are tender enough for your liking.

For the Portobello Mushroom Burger Assembly

  • Slice a small white onion and the portobello stems into ¼ inch strips.
  • Heat a frying pan and melt a small bit of butter. Sauté the onion and stems until they are caramelized and slightly browned. Salt to taste.
  • Fry the bacon, slice the cheese, tear the lettuce. If you are adding other toppings, prepare those as well.
  • And stack it all up!
