Peanut Butter Energy Balls

Sometimes you just need a peanut butter-chocolate fix, you know!? These little bites are perfect for those afternoons when you’re low on energy and ideas… and need a healthy snack that doesn’t make you think too hard about it.
Since my family is all at home so much recently, these always disappear almost as soon as I finish making them… I love snacking on them after working in the garden or going on a long walk. They’re a wonderful pick-me-up… definitely stir them up next time you’re in need of a little extra energy.
I love using whole, real ingredients in my food, and this peanut butter is my favorite. It has no added sugar, unlike many brands, so it isn’t sickly sweet. Just real peanut butter!
Raw, unsalted pumpkin and sunflower seeds work best in this recipe… the roasted ones tended to give an odd flavor. The oats, coconut flour, and coconut flakes help bind the bites together, and the flax and chia seeds add lots of extra good-for-you things.
The dark chocolate is amazing on these peanut butter balls. It adds an extra touch of sweetness besides the maple syrup, but if you need even more, go for milk chocolate. If you don’t need any extra, skip chocolate altogether!
Just put everything in a bowl and stir. It’s really that easy.
Absolutely adjust the amounts/ingredient list to your taste… Add nuts, chocolate chips, or different seeds; switch the maple syrup for some agave or honey; use what you have!
Chocolate can be a little bit tricky to melt all the way without getting it too hot and overcooking it. You’ll know it’s overcooked if it turns clumpy after it is mostly melted… here are some easy tips on how to avoid that!
Dip each ball halfway into the melted chocolate, and arrange on a parchment paper covered pan. If you’d like, you could try sprinkling them with course sea salt or chopped nuts – whatever you think would be yummy!
Chill for 15 minutes, or until the chocolate is hard. Serve!
