Peanut Butter Energy Balls

      Sometimes you just need a peanut butter-chocolate fix, you know!? These little bites are perfect for those afternoons when you’re low on energy and ideas… and need a healthy snack that doesn’t make you think too hard about it. 

      Since my family is all at home so much recently, these always disappear almost as soon as I finish making them… I love snacking on them after working in the garden or going on a long walk. They’re a wonderful pick-me-up… definitely stir them up next time you’re in need of a little extra energy.

  • coconut flakes
  • chia seeds
  • pumpkin seeds
  • sunflower seeds
  • flaxseeds
  • maple syrup
  • dark chocolate

what they’ve got      

      I love using whole, real ingredients in my food, and this peanut butter is my favorite. It has no added sugar, unlike many brands, so it isn’t sickly sweet. Just real peanut butter!

      Raw, unsalted pumpkin and sunflower seeds work best in this recipe… the roasted ones tended to give an odd flavor. The oats, coconut flour, and coconut flakes help bind the bites together, and the flax and chia seeds add lots of extra good-for-you things. 😉

      The dark chocolate is amazing on these peanut butter balls. It adds an extra touch of sweetness besides the maple syrup, but if you need even more, go for milk chocolate. If you don’t need any extra, skip chocolate altogether!

how to make the peanut butter balls

      Just put everything in a bowl and stir. It’s really that easy. 

      Absolutely adjust the amounts/ingredient list to your taste… Add nuts, chocolate chips, or different seeds; switch the maple syrup for some agave or honey; use what you have!

for the chocolate      

      Chocolate can be a little bit tricky to melt all the way without getting it too hot and overcooking it. You’ll know it’s overcooked if it turns clumpy after it is mostly melted… here are some easy tips on how to avoid that!

on the stovetop

  1. Cook on the lowest heat or use a double boiler.
  2. Add a small amount of a mild oil, such as grapeseed oil, to the chocolate.
  3. Stir constantly, scraping the bottom of the pan.
  4. Take it off the heat before it’s fully melted, and then stir until the chocolate is smooth.

in the microwave

  1. Melt the chocolate in short increments, no more than 30 seconds, and when it is nearly done, in 15-20 second intervals.
  2. Add a small amount of a mild oil, such as grapeseed oil, to the chocolate.
  3. Stir between every burst, scraping the bottom of the bowl.
  4. Stop cooking before the chocolate is completely melted, and stir until it is smooth.

how to finish the bites

      Dip each ball halfway into the melted chocolate, and arrange on a parchment paper covered pan. If you’d like, you could try sprinkling them with course sea salt or chopped nuts – whatever you think would be yummy!

      Chill for 15 minutes, or until the chocolate is hard. Serve!

Ingredients //

  • 1 cup Peanut Butter
  • ¼ cup Coconut Flour
  • ½ cup Old-Fashioned Oats
  • ¼ cup Coconut Flakes
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Raw Pumpkin Seeds
  • 1 Tbsp Raw Sunflower Seeds
  • 1 Tbsp Whole Flaxseeds
  • 1 Tbsp Maple Syrup
  • 50 g Dark Chocolate roughly chopped

Instructions //

  • Place all the ingredients except the chocolate into a bowl and stir with a fork until completely incorporated.
  • Roll into small balls with your hands.
  • Melt the chocolate in a double boiler on the stovetop or in the microwave.
  • Dip each ball halfway into the chocolate and arrange on a baking sheet covered with parchment paper.
  • Chill for fifteen minutes.
  • Serve!

Notes

  • It is easy to overcook chocolate. If it turns clumpy, it is overdone and you'll have to start over with new chocolate. If you're melting it on the stovetop, use low heat and watch it closely, stirring often. Adding a bit of a mild oil will help keep it smooth. If melting it in the microwave, cook in short increments, stirring between each one.
