Ingredients //

  • 1 cup Peanut Butter
  • ¼ cup Coconut Flour
  • ½ cup Old-Fashioned Oats
  • ¼ cup Coconut Flakes
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Raw Pumpkin Seeds
  • 1 Tbsp Raw Sunflower Seeds
  • 1 Tbsp Whole Flaxseeds
  • 1 Tbsp Maple Syrup
  • 50 g Dark Chocolate roughly chopped

Instructions //

  • Place all the ingredients except the chocolate into a bowl and stir with a fork until completely incorporated.
  • Roll into small balls with your hands.
  • Melt the chocolate in a double boiler on the stovetop or in the microwave.
  • Dip each ball halfway into the chocolate and arrange on a baking sheet covered with parchment paper.
  • Chill for fifteen minutes.
  • Serve!

Notes

  • It is easy to overcook chocolate. If it turns clumpy, it is overdone and you'll have to start over with new chocolate. If you're melting it on the stovetop, use low heat and watch it closely, stirring often. Adding a bit of a mild oil will help keep it smooth. If melting it in the microwave, cook in short increments, stirring between each one.
